This is a raw remake of a tasty sweet chili stir fry usually done with vermicelli noodles and sugar-filled sweet chili sauce. For the noodles, I used kelp noodles and for the sauce I made my own version. It came out pretty good and yummy so here is the recipe! It is very fast to make so it’s a perfect lunch for a busy day.

Ingredients for 2 servings
-1 pack of kelp noodles/ 1 πακέτο kelp noodles
-1 zucchini/ 1 κολοκυθάκι
-1 red pepper/ 1 κόκκινη πιπεριά
-2 carrots/ 2 καρότα
-2 lemons/ 2 λεμόνια
-2 tbsp sesame oil/ 2 κ.σ. σησαμέλαιο
-1 tsp chili flakes/ 1 κ.γ. τσίλι
-1 tsp dried garlic/ 1 κ.γ. σκόνη σκόρδο
-1 tbsp agave nectar/ 1 κ.σ. σιρόπι αγαύης
-1 tsp dijon mustard/ 1 κ.γ. μουστάρδα dijon
-salt & pepper to taste/ αλατοπίπερο
Chop the veggies finely and make the sauce using the rest of the ingredients besides the noodles. Mix veggies with sauce. Wash ans drain the noodles and add them to the rest of the dish. Mix well and let marinate for 15 minutes. Serve!
Ψιλοκόβουμε τα λαχανικά. Φτιάχνουμε τη σάλτσα ανακατεύοντας τα υπόλοιπα υλικά ετκός από τα noodles, και ρίχνουμε μέσα τα λαχανικά. Στη συνέχεια ξεβγάζουμε τα noodles και τα ανακατευουμε σε ένα μπωλ μαζί με τα λαχανικά. Αφήνουμε για κανένα τέταρτο να μαριναριστούν και σερβίρουμε.
