
Planning ahead for festive blog posts, the idea of a cheese ball hit me. I had several “recipe ideas” on my mind, using different and special ingredients that could work in a recipe. Then I thought that the last thing someone wants during a festive season with a lot of dinners to plan, is to stress over a cheese ball recipe. I mean come on! So to make your menu plans more on the stress free side I decided to give you a simple, no-fuss, easy-to-find-ingredient vegan cheese ball recipe. Did I mention that you can also make this recipe even a week ahead- You just have to do the rolling part the day that you are going to serve it. Oh, and it’s low fat too, but it has a fluffy whipped cream cheese texture (yum!).
Now go get some balls yourself.
-800 gr natural unsweetened soy yogurt/ 800γρ. φυσικό γιαούρτι σόγιας
-pinch of Himalayan salt/πρέζα αλάτι Ιμαλαϊων
-fresh chives or crushed peppercorns or crushed nuts of your choice/ φρέσκο σχοινόπρασσο ή σπασμένο πιπέρι ή ξηροκάρπια της επιλογής σας
All you need for this recipe is some cheesecloth or a nutmilk bag. Mix the salt with the yogurt and pour/place the yogurt in the cheesecloth. Bring the corners of the cheesecloth to enclose the yogurt, twisting the corners of the cheesecloth, to tighten. Now find a place to hang it-I used a window handle- and place a bowl under the cheesecloth to collect the water that will start dripping out of the yogurt. Leave it there and forget about it for 10 hours or so. Once it is firm like cream cheese, take it down and remove the cheesecloth.
Before serving roll your cheese ball in chopped fresh chives, crushed nuts-like raw pistachios or cracked peppercorns for a classy appearance and serve with crackers.
Για να φτιάξετε την τυρόμπαλα χρειάζεστε τουλουπάνι ή nutmilk bag. Ρίχνετε το γιαούρτι μέσα στε διπλό τουλουπάνι και το πιάνετε από τις γωνίες για να το κάνετε σα σακουλάκι. Στη συνέχεια στρίβετε τις γωνίες του και βρίσκετε ένα μέρος όπου μπορείτε να το κρεμάσετε- εγώ χρησιμοποίησα το πόμολο ενός παραθύρου. Από κάτω από το τουλουπάνι που στραγγίζει, βάζουμε ένα μπωλ για να μαζευτεί το νερό. αφήνουμε το γιαούρτι να σταγγίξει κι το ξεχνάμε για τουλάχιστον 10 ώρες. όταν έχει γίνει σφιχτό σαν τυρί κρέμα, ξεκρεμάμε το τουλουπάνι και το ανοίγουμε. Βγάζουμε το τυρί και το φυλαμε στο ψυγείο. Πριν σερβίρουμε το πασπαλίζουμε με ψιλοκομμένο σχοινόπρασσο ή σπασμένο πιπέρι ή ξηρούς καρπούς και σερβίρουμε με κρακεράκια.

Hey Nina, I found your website yesterday and since then I JUST CAN’T STOP READING and drooling over the screen (and I am far from being vegan…although I wish I had the guts to become one)

Where do we find chives in Athens, dried or fresh?

Glad you are enjoying it! You could find fresh chives (sxoinopraso) at the farmer’s market and some supermarkets. Dried chives can be found at spice and herb stores.
