Quesadillas!!


I used to really like quesadillas when I was eating dairy and I haven’t had one since a really long time! While I was in London, I bought shitloads of vegan cheese, mostly my favorite Sheese. I usually eat sheese plain, just a  small bite on my plate of food because it’s so good I enjoy it on it’s own! But today I thought I would make something with it! I also had some whole wheat tortillas, so quesadillas it was! Sheese is not super melty, but it does get soft and I found it worked perfectly in this dish. I used the cheddar with chives, but you can use any vegan cheese you have of course. Creamy vegan cheese like cashew cheese would also work as well as any spread really.

Ingredients [serves 1-2]

-2 large wholewheat tortillas
-70gr vegan cheese
-1/2 red pepper
-1/2 green pepper
-3 oyster mushrooms
-sprinkle of chipotle powder

Chop pepper and mushrooms in really small pieces and put them in a pan with a bit of olive oil. Cook them on medium heat for 3-4 minutes until they soften. Remove from the pan. Place one tortilla in the pan and top with vegan cheese and veggies and cover with another tortilla. Press down with a spatula. Let it cook for 3 minutes and flip to cook the other tortilla 3 minutes as well. Transfer on a plate and cut in quarters.

  • What’s the difference between oyster mushrooms and regular mushrooms? The quesadillas look good! Vegan, wow.

    Lauren, it’s just a different type of mushroom, definitely more nutrient dense than button mushrooms but you can use any kind you like!
