Leftover Uncookies


After I made almond milk and raw chocolate banana-ice cream, I was left with almond pulp and some melted chocolate banana ice cream. ( yes there is such a thing as leftover ice cream)I really don’t like to throw away  and waste food, so I decided to make some “leftover uncookies”. If you make almond milk regularly, you too end up with the annoying almond pulp and should know what I’m talking about.. If not, try to make almond milk just to make these cookies, it’s worth it. And then you can dip your leftover uncookies in your almond milk :) [For the melted chocolate banana ice cream, you can use 1 big banana blended with 3 tbsp cacao powder.]

Leftover Ingredients

-almond Pulp from 1 cup “milked” almonds/ πούλπα από 1 κούπα αμύγδαλα
-3 tbsp agave syrup/ 3 κ.σ. σιρόπι αγαύης
-1/3 cup melted raw banana ice cream [or one blended banana]/ 1/3 κούπας λιωμένο ωμοφαγικό παγωτό μπανάνα [ή μια μπανάνα πολτοποιημένη]
-3 tbsp cacao powder/ 3 κ.σ. ωμό κακάο σκόνη
-a few goji berries or other dried fruit/ μερικά μούρα γκότζι αποξηραμένα
-1/2 tsp vanilla powder/ 1/2 κ.γ. βανίλια σκόνη

To make these cookies, combine the almond pulp with the banana mixture in a bowl, add the rest of the ingredients-besides the goji berries- and mix it with your hands. Divide the dough in 10 pieces and place them in a dehydrator tray. Flatten them out and top the with goji berries. Gently push them in so they stick to the cookies. Dehydrate until they are dry, about 6 hours.

Για να φτιάξετε τα μη-μπισκότα ανακατέψτε σε ένα μπωλ όλα τα υλικά εκτός από τα goji berries, ζυμώστε ελαφρά και χωρίστε τη ζύμη σε 10 κομμάτια. Τοποθετήστε τα σε ένα ραφάκι στον αφυγραντή και πιέστε τα να γίνουν πλακέ. Ρίξτε από πάνω τα γκότζι και πατήστε ελαφρά να κολλήσουν. Αποξηράνετε για περίπου 6 ώρες, μέχρι να ξεραθούν.
