Today, November 1st is world vegan day! To celebrate, I organized a vegan potluck! I made mini brownies and cupcakes from Babycakes cookbook . I really love this book! If you like baking healthy, you should totally get it! It’s amazing
Instead of using the chocolate chips in the brownies, I melted them and dipped the top of the brownies in chocolate and decorated them with sprinkles to make them more festive!


I also made smoky sweet potatoes (I will post the recipe soon), baby potatoes with mustard and lemon, baked oyster mushroom cutlets ( recipe will be featured in my upcoming cookbook
), quiche, spring rolls and vol-au-vent filled with soy yogurt and fresh tomatoes. My friend Tzella made awesome pumpkin cookies using fresh pumpkin that she cut up herself! Oh yes a big ass pumpkin that was.. Vagi was feeling creative and made us these wicked canapes consisting of sliced potatoes, quince and apples cooked in spiced red wine, onions stuffed with saffron rissotto (yummy!) and last but not least a crazy-good tomato soup with nutmeg!
All in all World Vegan day was celebrated with a LOT of food and great people! It was a really fun day and by the end our stomachs were streched to a new level! Next day I didn’t eat until nightime…

I’ve heard really mixed reviews about the Babycakes book… Seems like most of the recipes don’t work out for people. Sounds like you haven’t had any failures yet, though!
I had problems with 2 recipes and thought it was the kind of sugar I was using, but after all it wasn’t that. I tried some other recipes like the brownies and the frosting and they are amazing! I think it is worth to get because it has awesome ideas for alternative baking!

This sounds like a really fancy potluck! I’m jealous and hungry now.
The cupcakes look great! I made some double chocolate cookies from Babycakes that worked much better if you chill the dough first.If not, they spread across the entire pan into one giant cookie (but still taste fab).

I, too, have been a bit hesitant about some of the recipes, but after seeing these I am definitely trying the cupcakes!!! Nice work.
Jenn, you should definitely try the cupcake frosting and the brownies!! The brownies are insane! I only had trouble getting the right texture with the cinnamon apple toastie. All the other things I have made turn out fabulous!

I am also a vegetarian and my body has never been in a very good shape. Being a vegan can really make you much heathier.`:`
