
I first tried Eringii mushrooms last year, when I found them at my local Asian store. I tried them grilled and smothered with barbecue sauce and they were delicious! But when I went to New York this summer, I tried them at Pure Food and Wine as scallops! Yes you heard correctly. And they tasted and looked a lot like scallops. The were served with cashew cream and hijiki seaweed. So when I bought Eringii again, I tried to make a scallop dish. Inspired by that dish, I used a very simple and fast way to make them (not as fancy as PFW but still delicious!).

Eringii mushrooms are also called King Oyster mushrooms, as they are in the same family with Oyster (Pleurotus ostreatus) mushrooms.
Ingredients
-10 Eringii mushrooms
-1 lemon
-1 tsp salt
-1 tbsp olive oil
-fresh chives to garnish

Chop mushrooms in thick (1inch) rounds. You will be able to get about 3 rounds from each mushroom. The cap and other leftovers of the mushroom can be used in another recipe, grilled for example.
In a dry, non-stick pan place the scallops and turn the heat on high. Let them cook for 3 minutes or until browned and the flip them to brown the other side as well. Remove from heat. Now juice the lemon and mix it with salt and olive oil and pour it over the mushrooms. Let them marinate for 10 minutes. Garnish with chopped chives and serve as an appetizer!
This dish will sure impress even your most exigent guest. It’s like givng the middle finger (in a delicious way) to your carnivore guests that don’t undestand veganism and always critisize you. It feels good, doesn’t it?

Scallops are just a big chunks of meat. You cant veganize them and expect them to taste similar AT ALL. This recipe is just eating big chunks of mushrooms. why even call them scallops? I dont understand why vegans go to all this trouble to try to make these weird meat substitutes. “72 Oz New York Strip Steak! (vegan, made of beans and tofu). yuk
They are actually a lot like scallops, and really simple and fast to prepare. Make it and you will be surprised! I agree that sometimes vegan meat substitutes are unnecessary and I rarely eat them, but this is not a substitute! As you can see from the title, I do not call them king scallops, but Eringii scallops which means means they are mushrooms cut in the shape of scallops! It it just a fun name, like, let’s say Bull’s eye cookies. It’s obviously not an actual bull’s eye, it is just shaped like one!

i was searching for the type of mushroom i just ate, which reminded me of scallops so much i knew someone else must have tried it! thanks for helping me identify the type, i bought a wide variety and couldn’t remember what was what.
