
Chia seeds are tiny little black, white and grey seeds native to Mexico. Chia seeds have been consumed as a staple foods by Aztecs along witb corn, beans and amaranth. What makes them so special? They are loaded with Omega 3 fatty acids, much more than salmon per gram. They are also rich in antioxidants, dietery fiber and protein. When soaked in water they form a thick gel-kind of like flaxseeds, but event thicker, so they are perfect to thicken smoothies, soups or just soak them in any kind of milk with a bit of sweetener and spices and make a pudding out of it! I used Navitas chia seeds which I bought while I was in New York. So here is the pudding I made with them, that reminds me of a traditional greek rice pudding called “rizogalo”.
Ingredients
-1 cup raw almond milk/1 κούπα ωμό γάλα αμύγδαλου
-4 tbsp whole chia seeds/4 κ.σ. ολόκληρους σπόρους chia
-4 tbsp agave syrup/4 κ.σ. σιρόπι αγαύης
-1/2 tsp vanilla extract/ 1/2 κ.γ. εκχύλισμα βανίλια
-1/2 tsp ground cinnamon/ 1/2 κ.γ. τριμμένη καννέλα
-pinch of salt/ πρέζα αλάτι
Mix all ingredients together in a bowl taking care to wet all the seeds. Then let it set in the fridge for about 1-2 hours or overnight for a delicious nutritious ready breakfast! Enjoy plain or with dried/fresh fruits! You can also experiment using different milks, like coconut milk and different spices.
Ανακατεύουμε όλα τα υλικά μέσα στο γάλα σε ένα μπωλ, προσέχοντας να βραχούν όλοι οι σπόροι. Βάζουμε στο ψυγείο και περιμένουμε να πήξει καμιά δυο ώρες ή εναλλακτικά το βάζουμε στο ψυγείο το βράδυ και το πρωί είναι έτοιμο για ένα θρεπτικό πρωινό μαζί με λίγα φρούτα! Μπορείτε επίσης να πειραματιστείτε με άλλο γάλα, όπως γάλα καρύδας και διαφορετικά μπαχαρικά.

I love chia seeds
This is great to eat them — I usually just drink them in water or add a few to a dish. This is a great way to eat a good amount at once. They really are so good for you!

I tried to do that with skim milk but it didn’t work. The consistency was the same as plain milk, not pudding at all.
What did I do wrong?
I havent tried it with dairy milk since i am vegan, but it should work with any liquid. Maybe you didn’t use enough chia seeds or you didn’t let it soak enough to thicken? It’s should be very simple to make. Let me know how it works out for ya.
