
Since I started getting my hands on raw cacao butter, I have been wanting to make a white raw chocolate. But I was going for a more complex flavor than just making a simple vanilla white chocolate so I added some lucuma powder as well as some green tea matcha powder. I have no clue if matcha is really raw but I think it is. It gives the chocolate a more complex flavor and a nice green tint. Make this indulgent yet healthy chocolate as a festive treat for yourself and share it with someone special!
Matcha Lucuma Chocolate (for 15 bite sized pieces)
-70 gr raw cacao butter/ 70γρ ωμό βούτυρο κακάο
-2 tbsp coconut butter/ 2 κ.σ. λάδι καρύδας
-3 tbsp agave syrup/ 3 κ.σ. σιρόπι αγαύης
-2 1/2 tbsp lucuma powder/ 2 1/2 κ.σ. σκόνη λουκούμα
-1 tsp green tea matcha powder/ 1 κ.γ. σκόνη μάτσα (είδος πράσινου τσαγιού)
-1 vanilla bean, scraped/ σποράκια από 1 κλαράκι βανίλια*
-tiniest pinch of salt/ ελάχιστο αλάτι
Grate cacao butter and Gently melt it- I use the dehydrator but bain marie method works fine. Once melted add in the rest of the ingredients and mix until well incorporated. Pour into chocolate molds and freeze until the chocolate is solid.

*Για να βγάλουμε τα σποράκια από το κλαράκι της βανίλιας το ανοιγουμε με ένα μαχαιράκι κατά μήκος και με τη λεπίδα του μαχαιριού ¨ξύνουμε” το εσωτερικό της βανίλιας με αποτέλεσμα να μένυον τα μαυρα σποράκια πάνω στη λεπίδα. αυτά τα χρησιμοποιούμε στο μείγμα.
Τρίβουμε το βούτυρο κακάο και το λιώνουμε απαλά- Χρησιμοποίησα τον αφυγρανή, αλλά μπορεί να γίνει και με τη μέθοδο μπεν-μαρί. Μόλις λιώσει ρίχνουμε τα υπόλοιπα υλικά και ανακατεύουμε μέχρι να αναμειχθούν. Μεταφέρουμε το μείγμα σε καλούπια για σοκολατάκια και τα καταψύχουμε μέχρι να στερεοποιηθούν.

They do look really nice, my parnter nad I have been making Raw Chocolate now for about a year. I just gets nicer and nicer. I have found A great new, cheaper, for the supplys we use http://www.indigo-herbs.co.uk they sell a raw chocolate butter which we have used for raw white chocolate, there are a few tricks to getting it work, but its not that hard.
