Every time I look at these strawberry Santas I just can’t stop myself from laughing… They are so cute and make me feel very festive, even if strawberries are totally undeniably out of season.
To make these, you need some vegan vanilla frosting, strawberries and a few dark chocolate chips.
Vanilla frosting
-1 coconut milk can
-1/4 cup maple syrup
-1/4 tsp ground vanilla bean
-2 tsp agar powder
-4 tbsp coconut cream/butter or cashew butter or white almond butter
In a saucepan combine coconut milk, maple syrup, agar powder and vanilla bean. Let it simmer for 5-10 minutes or until the agar is dissolved. Transfer in a container and refrigerate until its set- about 30 minutes to 1 hour. Then place it in a food processor and add the nut butter of your choice. Process until its creamy and whipped, about 2 minutes. Transfer cream in a piping bag. Cut off the stems of the strawberries and also cut the tips to use as hats. Pipe cream on them and top with the tips, add a dot of cream on every tip and use the chocolate chips as eyes!

cute! I’ve also seen the strawberry “santa hats” made with a raw version. strawberries aren’t out of season for everyone! they are just coming into season down south.
These have got to be the cutest Christmas inspired treats ever!
I tried to make them yesterday with cream cheese frosting but the icing wasn’t thick enough and kept melting so I eventually gave up. Yours look great!

Looking at the ingredients, can you clarify what you mean by coconut milk can? Is that like Coco lapez that you use for pina coladas? Maybe you can show the label so people will know exactly what it is. What an adorable and creative idea! Do they need to stay refrigerated till ready to serve? Seems like that is a lot of maple syrup. Does the maple syrup have any specific feature in this recipe beside sweetens it?
Just curious! Could Sugar Free syrup be used?
