If you are Greek, these weeks your house, or anywhere you go for that matter, is filled with piles and piles of melomakarona. Sometimes you may find yourself with so many of these Christmas cookies, you get uncomfortable. For all of you who want to get rid of the melomakarona piles in your homes, whip up a batch of this version of kormos and serve it on your New Years dinner. It can even be raw, if you made my raw melomakarona recipe!
2 cups crushed melomakarona
1/3 cup almond butter
2 tbsp coconut oil
2 tbsp maple syrup (or honey if you use it)
1 tsp vanilla extract
1/2 tsp ground cinnamon
In a bowl, add all the ingredients except the melomakarona and whisk until everything is incorporated.Mix in the melomakarona and lightly knead with your hands. Transfer the dough on an aluminum foil and roll into a log. Place it in the fridge for a few hours or overnight to set. Decorate with extra melomakarona and/or sprinkles and serve. Enjoy!
