
Every Christmas Greek people bake-or buy 2 types of cookies : melomakarona and kourabiedes. Melomakarona are very moist spiced honey cookies , soaked in a syrup and topped with crushed walnuts.Kourabiedes are usually ball-shaped butter/almond meal cookies rolled in powdered sugar. I always hated Kourabiedes but liked melomakarona. So this year I decided to bake melomakarona for the first time! These cookies are almost vegan traditionally. The only non-vegan ingredient is honey. I don’t mind consuming small amounts of organic honey, but using huge amounts to make the syrup while all of Greece is probably consuming a shitload of it to make these, I didnt feel good using it in my ingredients list. I actually never cook with it.This blog is after all a vegan food blog and I have to show that anything can be done vegan!
This cookies are actually kind of healthy for a cookie, and with my alternations they are even healthier, all organic and low-glycemic. If you want to make these for a diabetic, omit the sugar altogether, because the agave syrup is more than enough! Also, these can be made with a combination of semolina and flour or all flour. I prefer the texture of the semolina ones but that is up to you! Dont be put off by the amount of cookies you are going to make [30!]because :
1. You will like them for sure and I promise your guests will lick the plate clean!

Cookies
-2cups spelt semolina flour/ 2 κούπες ντινκελ σιμιγδάλι
-1 cup wholewheat spelt flour/ 1 κούπα αλεύρι ντινκελ ολικής
-3/4 cup olive oil / 3/4 κούπας ελαιόλαδο
-1/4 cup rapadura sugar(evaporated cane juice)/ 1/4 κούπας ζάχαρη ραπαντούρα
-1/4 cup cognac/ 1/4 κούπας κονιάκ
-1/4 cup fresh orange juice/ 1/4 κούπας χυμό πορτοκαλιού
-2 tbsp orange peel/ 2 κ.σ. ξύσμα πορτοκαλιού
-1 1/2 tsp cinnamon/ 1 1/2 κ.γ. καννέλα
-1 heaping tsp of soda/ 1 κ.γ. μαγειρική σόδα
Syrup & Topping
-250ml agave syrup/ 250μλ σιρόπι αγαύης
-2 tbsp rice malt syrup/ 2 κ.σ. βύνη ρυζιού
-3/4 cup water/ 3/4 κούπας νερό
-2 cloves/ 2 γαρύφαλλα
-1 cinnamon stick/ 1 ξυλάκι καννέλας
-3/4 cup crushed walnuts for sprinkling/ 3/4 κούπας τριμμένα καρύδια
First, using an electric mixer beat sugar with olive oil for 5 minutes. Add cognac, orange peel and the orange juice with the soda powder diluted in it. Then slowly start shifting the semolina-flour-cinnamon mixture in the wet mixture. Once you use all of the flour, knead with your hands so that everything is well combined. With your hands pinch small amounts [1 tbsp] off the dough and roll in a ball shape. Lay all the balls on a baking dish lined with baking sheet and with a fork press each one of them to flatten them a bit. Bake in preheated oven at 180C fro 20-25 minutes.[I did mine in 2 batches]
To prepare the syrup, pour all the ingredients in a pot [besides walnuts] and bring to a boil. Lower the heat and keep shimmering for 15 minutes. Once the cookies are ready, move them to a big platter and sprinkle them with walnuts and with a big spoon pour the syrup all over them. Make sure you use all the syrup! These cookies are not good without the syrup and need to be soaked in the syrup for a few hours before you serve them. At least 4 hours, or even better overnight. Jut cover the platter and let them sit on your kitchen counter.
Πρώτα με ένα ηλεκτρικό μίξερ χτυπάμε το λάδι με τη ζάχαρη για 5 λεπτά. Προσθέτουμε το κονιάκ, το ξύσμα πορτοκαλιού και το χυμό με η σόδα διαλυμένη μέσα. Σιγά σιγά προσθέτουμε τα αλεύρια που έχουμε ανακατέψει μαζί με την καννέλα. Όταν ρίξουμε όλο το αλεύρι πλάθουμε με τα χέρια και αρχίζουμε να κάνουμε μπαλάια ζύμης [περίπου μια κουταλιά της σούπας] και τα τοποθετούμε σε ταψί. Με ένα πιρούνι τα πατάμε να πάρουν σχήμα και τα ψήνουμε για 20-25 λεπτά στους 180. Ρίχνουμε όλα τα υλικά για το σιρόπι σε ένα κατσαρολάκι και το αφήνουμε να πάρει μια βράση. Σιγοβράζουμε για 15 λεπτά σε μέτρια φωτιά. Μεταφέρουμε τα μπισκότα σε μια μεγάλη πιατέλα και τα πασπαλίζπυμε με τα καρύδια. Με μια κουτάλα περιχύνουμε τα μελομακάρονα με το σιρόπι [χρησιμοποιήστε το όλο] και τα αφήνουμε να το ρουφήξουν για τουλάχιστον 4 ώρες ή όλο το βράδυ πριν τα δοκιμάσουμε!

You can totally substitute all of the syrups with maple syrup, I think it will be delicious! Let me know how it turned out for you.
so finally i put brown sugar syrup (campesino cane sugar)and maple syrup, 125ml each.
the result was really delicious! maple syrup has a very strong flavor so i would not recommend more than that. The cookies were juicy yet firm, and full of aroma and taste!I will definitely make them again next year;)
