Mango Coco Smoothie

I never really liked regular mangoes because I thought they had a pine-y aftertaste. but I also had no clue that there were different kinds of mangoes! When I was introduced to Thai yellow and green mangoes, I was hooked! They are more oblong shaped than the regular round mangoes I grew up with. The green ones are sour and perfect for savory dishes, while the yellow ones are soft, velvety textured, very juicy and sweet! Since I tried them last year, they are one of my favorite fruits! This smoothie lets the yellow mango taste shine through, with summery notes of coconut flavor. A refreshing, perfect way to start a hot summer day.

Ingredients
-1 Thai yellow mango/1 κίτρινο Ταυλανδέζικο μάνγκο
-1 cup coconut milk or 1 cup water+1tbsp Artisana coconut meat butter/ 1 κούπα γάλα καρύδας ή 1 κούπα νερό+ 1 κ.σ. μους καρύδας Atisana
-2tbsp soy yogurt [optional]/ 2 κ.σ. γιαούρτι σόγιας [προαιρετικό]
-4 ice cubes/ 4 παγάκια

Place all ingredients in a blender and blend until smooth. If too thick, add a bit more water. Serve chilled.

Ρίξτε όλα τα υλικα στο μπλέντερ και ανακατέψτε μέχρι να γίνει τελείως απαλό. Αν χρειάζεται αραίωμα, προσθέστε λίγο νερό. Σερβίρετε κρύο.
